Eggless Vanilla Cupcakes with Chocolate Buttercream Frosting

Here's a simple recipe for basic eggless vanilla cupcakes with chocolate buttercream frosting. The simplest of cupcakes yet they taste wonderful!

INGREDIENTS –

(cupcakes)

1 ½ cups Flour

2 tbsp Cornflour

1 cup curd/yoghurt

½ cup sugar (add more if needed)

½ tsp baking soda

1 ¼ tsp baking powder

½ cup oil or melted butter

Vanilla essencce

Water


(frosting)

¼ cup sugar

¼ cup melted butter

3 tbsp melted chocolate

2 tbsp cream


METHOD –

1.    Take a bowl and a sieve.













2.Sift together all the dry ingredients.



3.   Add curd to the dry ingredients.


4.   Mix well.


5.   Add melted butter.


6.   Whisk well.

7.   Add few drops of vanilla essence.














8.    Add water as needed to make the batter thinner until it is of pouring 
consistency.


9.   Put the oven for pre-heating.











10.Take a cupcake tray and grease it with oil/ butter.


11. Pour the batter into the tray.


12.Bake at 180 degree Celsius for 15- 20 minutes



13. When baked, take the cupcakes out and let them cool


14. For the frosting, take melted butter in a bowl.


15. Add sugar and whisk.


16. Add melted chocolate and whisk well. You might add more chocolate than in the recipe.


17. Finally, add cream and mix.












18. Refrigerate for 5- 10 minutes and then pipe the frosting onto the cupcakes 
or cover with the help of a knife.


19. Garnish with sprinkles, chocolate shavings etc.



20.  The last step and my favourite – enjoy the yummy cupcakes!
